Hubby and I are enjoying Bruschetta with wine while sharing the news of the day. This recipe is a slight alteration of a Giada recipe – it’s always a favorite of Hubby’s.
The bread is cut on the diagonal, drizzled with some good olive oil and toasted….
After the toasts cool, I generously spread them with mascarpone cheese, top with some sun-dried tomatoes…..
I vary the green layer, we love capers or fresh basil…..
Tonight, for variety, and because there were no capers in the frig…...
The green layer is cilantro pesto……
It was delicious……

we love this too (I have to have a gluten free version and less on the oil, but my hubby can have regular). We first had this in Charleston, SC ….we were sold on it ever since! Sometimes we just use a good Marinara sauce when we want a quickie.
