Hubby and I are enjoying Bruschetta with wine while sharing the news of the day. This recipe is a slight alteration of a Giada recipe – it’s always a favorite of Hubby’s.
The bread is cut on the diagonal, drizzled with some good olive oil and toasted….
After the toasts cool, I generously spread them with mascarpone cheese, top with some sun-dried tomatoes…..
I vary the green layer, we love capers or fresh basil…..
Tonight, for variety, and because there were no capers in the frig…...
The green layer is cilantro pesto……
It was delicious……

I love brushetta and make it often in the summer with fresh tomatoes and basil, sometimes fresh mozzarella. I’ve never tried it with marscapone. Yum!
