In my youth, oh so long ago, I made stuffed mushrooms for my parent’s dinner parties. The recipe was lost, so I thought I’d give them a try from memory.
You begin with large mushrooms, more space for the yummy filling……
Remove the stems, dice along with half an onion.
Saute until they begin to lightly brown, mix with softened cream cheese and crumbled blue cheese….
Stuff the mushrooms, broil until lightly browned
The original recipe calls for Blue Cheese salad dressing mix, the crumbled blue cheese works just as well, if my memory is correct.
Enjoy, with a glass of wine.

Can I come to sample. Hubby has decided (after 40 years) that he no longer likes mushrooms. Go figure! I love them; I have even grown them!!! Thanks for the great idea. I would love for you to join me for Crock Pot Wednesday.

Looking good!! (did you know most blue cheese has gluten–I have to be gluten free and when I first was eating this way I didn’t know this. I kept wondering why the salads were bothering me….it was months later that I found out about most blue cheese containing gluten)
