C is for Cupcake….orange cupcakes to be precise. A little bit of sweet heaven. Of course my favorite part is the orange frosting….and I need enough to have a lil with each bite. So pile it high and make it pretty. If there are two, I promise to share….
I used a cake mix with some alterations to make this taste yummy like a “made from scratch” cupcake…I’ll share….
then I guarantee, you’re going to want to make a few for your house, they’re soooo good!
Ingredients
- 1 box Betty Crocker Super Moist Yellow Cake Mix
- ½ C unsalted butter
- 1 C buttermilk
- 3 eggs
- 1 teaspoon vanilla
- 1 teaspoon orange extract OR 1 TBS Grand Marnier (optional)
- zest from one large orange
- For the frosting:
- 5 TBS unsalted butter, at room temperature
- 2 oz. of ⅓ reduced fat cream cheese, at room temperature
- pinch of kosher salt
- 2 cups confectioner's sugar
- 1 TBS orange juice
- 1 TBS Grand Marnier (optional)
- 1 tsp. orange zest
Instructions
- Prepare the cake mix according to the package instructions, making substitutions for the oil and water and adding the extra ingredients.
- Bake as instructed.
- While the cupcakes cool, prepare the frosting.
- Frost completely cooled cupcakes using a pastry tube or a zip lock bag with the corner trimmer to give you the look in the photo.
