Orange Cupcakes
Ingredients
  • 1 box Betty Crocker Super Moist Yellow Cake Mix
  • ½ C unsalted butter
  • 1 C buttermilk
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon orange extract OR 1 TBS Grand Marnier (optional)
  • zest from one large orange
  • For the frosting:
  • 5 TBS unsalted butter, at room temperature
  • 2 oz. of ⅓ reduced fat cream cheese, at room temperature
  • pinch of kosher salt
  • 2 cups confectioner's sugar
  • 1 TBS orange juice
  • 1 TBS Grand Marnier (optional)
  • 1 tsp. orange zest
Instructions
  1. Prepare the cake mix according to the package instructions, making substitutions for the oil and water and adding the extra ingredients.
  2. Bake as instructed.
  3. While the cupcakes cool, prepare the frosting.
  4. Frost completely cooled cupcakes using a pastry tube or a zip lock bag with the corner trimmer to give you the look in the photo.
