After college, son numero uno worked at a restaurant in Staunton – The Heavenly Bake Shop. It was a small personal restaurant where lunch was served daily, and occassionally dinner on the weekends. The owner and chef was kind enough to share his recipe for Flamiche…..
I served the Spinach Feta Flamiche with salad and La Brea Bakery bread……
Heavenly Flamiche
9×13 pan (spray with Pam)
place pie crust on the bottom only
1 box frozen spinach – thaw, spread evenly over crust
1lb feta cheese, sprinkled over spinach
combine 14 eggs and 1 qt milk, 1/2 tsp salt, 1/8 tsp pepper. pour over spinach and cheese. sprinkle the top with nutmeg.
Bake @350* for 1 hour
optional – substitute ham and aged swiss for spinach/feta
