Time just flies when you’re having fun… I can’t believe we’re already back to Foodie Friday, it’s time for another visit to Designs By Gollum to see all the delish treats Michael has waiting for us……
Hubby and I made meatballs, first trek off course, the original recipe didn’t have meat – oops….
We used our daughter-in-law’s secret family recipe for Italian meatballs…..
We sauteed several carrots and an onion with some garlic, I forgot to buy celery or we would have included some in the mix. Hubby is tossing in a Parmesan cheese rind for extra flavor……
Next came the addition of 2 cans of canellini beans, a large can of tomatoes, basil, oregano, parsley, salt , and pepper to taste. The browned meatballs and chicken broth to cover. While I beat my mother and Hubby at a game of Sequence, the soup cooked for 30 minutes…..
I added 1/2 a bag of fresh spinach leaves, simmer for 15 minutes and serve….
