Yesterday we had a Moroccan Tablescape, for Foodie Friday at Designs by Gollum we’re taking our hats off for dinner.
Under the tangine lid we have Moroccan Chicken with olives and preserves lemons, couscous, and a yogurt sauce……..
I glanced at a few recipes and decided to ad lib a bit…
A couple hours before time to cook, I rubbed the chicken breasts with a little olive oil and Moroccan Seasoning from Victoria Taylor’s. I cut the breasts in thirds, seared them in olive oil and set them aside.
Next I sauteed a sliced onion until tender, added two minced garlic cloves and a teaspoon of grated ginger, cooked just a minute before adding chicken stock and the chicken pieces. I then added some olives (green and kalamata), artichoke hearts, and a little more seasoning – not too much – Hubby has a delicate pallet. Everything went into the tangine, cover, and bake. A sprinkle of fresh cilantro and it’s finished! I made couscous with apple juice, sun dried tomatoes, and dried apricots…….
and a yogurt sauce with plain Greek yogurt and mango chutney ……..
That’s it, a quick and easy Moroccan dinner…..

What a lovely tagine! I looks like it’s glazed on the outside. I don’t like the feel of unglazed terra cotta, so a glazed one would be wonderful.
