Chicken Curry

I make this Chicken Curry recipe for meal prep. I eat one serving on the day I cook and have five remaining for the week.

Chicken Curry

Ingredients:

·         I medium onion, chopped

·         2 gala apples, cubed

·         16 oz. fresh or canned pineapple chunks

·         16 oz, can diced tomatoes

·         1-2 Cups chicken broth (granular bullion with water is an easy sub)

·         2 Cups cooked diced chicken breast

·         2 tablespoons curry powder

Instructions

·         Saute the onion and apples until tender.

·         Add remaining ingredients and simmer for 30 minutes.
