BBQ Chicken with White Nectarines
This is one of my favorite bowl dinners. I love the combination of the spicy BBQ sauce and the sweetness of the nectarines. This is a Costco dinner. I buy their packaged rotisserie chicken breast. The meat tastes like their whole rotisserie chicken and NOTHING like the frozen "chicken" breast strips.
While there, I grab a bag of their Asian slaw salad mix—it has more than enough for two meals. The white nectarines (or peaches) are sweet and fabulous, and I love having extras for breakfast. The bacon and feta are from Costco, too—it's a one-stop shop. I'm there almost weekly to buy dog food, so finding some people's food is nice.
BBQ Chicken with White Nectarines
Ingredients
- 4 tablespoons olive oil, divided 
- 2 tablespoons sherry vinegar 
- 1/4 teaspoon freshly ground black pepper 
- 1/4 teaspoon kosher salt 
- 1 1/2 cups sliced fresh white nectarines (about 2 medium) 
- 1 (12-oz.) pkg. broccoli slaw (I use Asian slaw mix from Costco) 
- 2 rotisserie chicken breasts, cut into 1-in. strips 
- 1/4 cup barbecue sauce 
- 1 tablespoon chopped fresh chives 
- 1 ounce feta cheese, crumbled (about 1/4 cup) 
- 2 bacon slices, cooked and crumbled 
Instructions
- Combine 4 tablespoons oil, vinegar, 1/4 teaspoon pepper, and 1/4 teaspoon salt in a large bowl, stirring with a whisk. Add nectarines and slaw to vinegar mixture; toss gently to coat. 
- Place chicken in a skillet to brown...just a little. Add barbecue sauce to pan and toss to coat. 
- Divide slaw mixture evenly among 4 plates; top evenly with chicken strips. Sprinkle with chives, feta, and bacon.
