My son and I made this yummy roasted gnocchi last night … fast, easy, and delish .. all the boxes checked.
We roasted the fresh gnocchi and cherry tomatoes on a high heat.
A quick toss with some fresh herbs and mozzarella pearls … topped with a balsamic drizzle and it’s time to feast!
Roasted Gnocchi
Ingredients
- 2 lbs. fresh gnocchi
- 2 containers cherry tomatoes
- 2 cloves garlic, minced
- Olive oil
- 1 bunch fresh basil
- Zest of one Lemon
- Balsamic vinegar (we used chocolate)
- Salt and pepper
Instructions
Preheat oven to 450
- Spread gnocchi and tomatoes in large baking pan
- Top with minced garlic
- Drizzle with olive oil, toss to coat
- Bake for 17 min or until gnocchi is golden
- Remove to large serving bowl
- Toss with basil, lemon zest, and mozzarella
- Salt and pepper to taste
- Drizzle with balsamic
