White peaches are heavenly right now, this salad is the perfect blend of savory with the peach sweetness.
I followed a recipe found on Instagram, with a few tweaks … of course.
This salad is the perfect summer side for any grilled meat. Our plan was pork tenderloin .. we ended up skipping the meat and just having salad.
Peach Gorgonzola Salad
Ingredients
- 3 peaches, chopped
- Gorgonzola crumbles
- Roasted pecans, chopped
- Red onion chopped
- Fresh basil, torn
- 1/2 lemon
- Olive oil
- Salt
- Balsamic glaze
Instructions: Combine the peaches, onion, pecans, and the amount of Gorgonzola you like. I didn’t measure anything, it is made all according to your preferences. I like more pecans, less red onion … you may want more onions. The combination is up to you.
Squeeze the juice from the lemon over the salad, drizzle with olive oil, sprinkle sea salt and toss. Finish with a drizzle of balsamic glaze and enjoy!
