Pork tenderloin is an easy to prepare favorite. For this dinner, I added some Yoshida sauce (a kicked up teriyaki sauce) to the pork, wrapped it in foil, and baked it for 30 minutes.
That’s yummy all on its own. Tonight for a special treat, I made a relish with dates, orange juice, and cilantro. I let the flavors blend for a couple of hours before serving.
Tonight the sides were asparagus with a drizzle of lemon olive oil and some basil. Scalloped potatoes rounded out the meal … the potatoes were discovered in a recent clean out of the freezer … everyone survived so I guess they hadn’t expired.
Date Relish
- 2/3 C chopped fresh medjool dates
- fresh orange juice from 1/2 orange
- 2 Tablespoons chopped fresh cilantro
Combine the three ingredients and allow to rest for 1-2 hours before serving over pork tenderloin.
