Oven Roasted Fruit
Ingredients
  • 8 ripe peaches, peeled, cut in eighths
  • 8 ripe plums, cut in quarters
  • 2 cups fresh raspberries
  • ½ cup splenda or other sweetener
Instructions
  1. Bake uncovered @ 450 20 - 25 minutes
  2. Next turn broiler on, watch the fruit carefully - broil 5 minutes - until raspberries release their juice.
  3. Sprinkle with ⅓ cup raspberry/cranberry juice - orange juice works too.
  4. I serve with a dollop of softened mascarpone
