Spiralized veggie noodles are my new thing …. I incorporate them into at least two meals a week. Making pasta dinners has always been my fast go-to comfort meal. Hubby’s preference is always for a meat/tomato saucy topping. My preference is for a light shrimp/veggie no sauce topping. The trend of using veggies as an alternative to pasta thrills me because, even if I’m using a meat/tomato sauce, I’m reducing the calories. Having so many varieties of spiralized veggie noodles in the grocery store makes preparing them easy, peasy. I searched for a few recipes in an effort to win Hubby over to non-pasta noodles …each one left him asking for more.
I love peanut sauce on anything. Combining peanut butter and sweet carrot noodles is a match made in heaven for me.
How pretty is this? Beets taste great, are so very healthy, you can’t top their colorful look on the plate ….always important to me. Even Hubby, who claims to hate beets, loves them in noodle form ..silly man.

Sweet Potatoes are one of my faves, not so much for hubby. That said, with the artichokes, chicken and delicious tomato sauce … I do believe we’ve found a sweet potato winner.
I use my spiralizer; however, I must admit that I also grab the already made veggie noodles when they’re available to me. It’s still better for me if hubby doesn’t know he’s eating a zucchini noodle until after he’s tried it … it’s a mental thing … he loves the taste.
