On the Menu this week I’m following the Cooking Light Diet menu …with modifications, of course. I add some carbs for Hubby – he burns far more calories than I do. I will be making some modifications based on food on hand and our(my) preferences. For instance, I purchase a bag salad at Costco yesterday and I plan to use it for the salads on Tuesday and Friday.
Monday – Grilled Pork Tenderloin with Roasted Veggies
Tuesday – Lemony Grilled Shrimp Salad
Wednesday – Lemon Garlic Pork and Broccoli Bulgar Bowl
Thursday – Broccolini, Red Pepper, and Roasted Garlic Frittata
Friday – California Caprese Bowl
