BBQ Chicken with White Nectarines is one of my favorite bowl dinners to date. I love the combination of the spicy BBQ sauce with the sweetness of the nectarines.
This is really a Costco dinner…I buy their packaged rotisserie chicken breast…did you know they make extra chickens so they can sell just the breast meat in a vacuum pack bag? I didn’t know that until recently and I LOVE it! The meat tastes just like their whole chickens and NOTHING like the frozen “chicken” breast strips.
While I’m there, I grab a bag of their Asian slaw salad mix…there’s more than enough for two meals.
And….the white nectarines…they’re so sweet and fabulous.
Now that I think about it, the bacon and feta are from Costco too…one stop shop. I’m there to buy dog food almost weekly, so it’s nice that I can find a little people food too.
- 4 tablespoons olive oil, divided
- 2 tablespoons sherry vinegar
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon kosher salt
- 1½ cups sliced fresh white nectarines (about 2 medium)
- 1 (12-oz.) pkg. broccoli slaw (I use Asian slaw mix from Costco)
- 2 rotisserie chicken breasts, cut into 1-in. strips
- ¼ cup barbecue sauce
- 1 tablespoon chopped fresh chives
- 1 ounce feta cheese, crumbled (about ¼ cup)
- 2 bacon slices, cooked and crumbled
- Combine 4 tablespoons oil, vinegar, ¼ teaspoon pepper, and ¼ teaspoon salt in a large bowl, stirring with a whisk. Add nectarines and slaw to vinegar mixture; toss gently to coat.
- Place chicken in a skillet to brown...just a little. Add barbecue sauce to pan and toss to coat.
- Divide slaw mixture evenly among 4 plates; top evenly with chicken strips. Sprinkle with chives, feta, and bacon.
