It’s five o’clock – cocktail time! We’re having guacamole and margaritas.
What better way to celebrate the arrival of warm sunny days than sipping a margarita beside the koi pond?
The shade sails are one of the first winter to spring changes around here…not that they’re needed, I’m just antsy for the “look” of the warm weather.
My guacamole is simply a mixture of a little minced white onion, garlic powder, salt and ripe avocados. I know it’s not the fancy, salsa added, versions I see at some restaurants…it’s our favorite though. I’ve had a version with a little lime juice added to keep it from turning brown…and I like the flavor. However, one son has an allergy to citrus so I’ve always kept the pit in the bowl until serving time. The pit keeps the guacamole from changing colors without altering the ingredients.
While we nibbled and sipped, the fish ate dinner…..
Maybe I’ll go prepare dinner……then again, maybe not!
Our favorite Margarita recipe:
1 part Triple Sec
1 part Gin
2 parts Tequila
4 parts sweet and sour drink mix
Now you see why I need to prepare dinner BEFORE cocktail time – ha!
