Good morning from Frank’s Mill…it’s a glorious sunny day here. I always feel optimistic about having a great day filled with accomplishments when the day begins filled with sunshine. My optimistic view doesn’t always pan out…but it doesn’t stop me from beginning with the Pollyanna outlook the very next sunny day. Seize the day…at least begin with that attitude.
I’ve been doing a slow transition into spring decor….I always begin with the tray on the den coffee table and the kitchen island. Funny isn’t it, the room I spend the majority of my time in never changes for the seasons. I keep the same trinkets on the coffee table all year….they’re spring like in color…I love them because they remind me of my favorite time of year even when it’s snowing and retched outside. The room was originally the boy’s den/video game room, then my office..now my office with a space for Hubby to keep me company. With the transition came a minor facelift with a huge impact….you’re going to have to come back to see the fabulous change…you didn’t think I’d give everything in one post, did you? Here is the before…
I’ve been using recipes from the Cooking Light Diet and loving them…I vary them a little…and make some additions for Hubby because he’s already skinny. Some variations, like the one for this dinner, are due to my (clean freak) mother-in-law coming through in her son…he washed the skillet before I could make the sauce to go over the chicken so I was forced to adlib. He almost got an arm punch when he kept saying…”This is really good!”…I think he was trying to make up for his ever increasing compulsive cleaning behavior. This compulsion seems to focus only on my cooking …I have yet to see him scrub the shower…perhaps I should suggest it as a deflection when I make dinner tonight…
I’ll share the original recipe and my variation…it was quite tasty. Until next time….
