Salmon with Tomatoes, Capers, and Wine is such an easy, healthy dinner…I love meals like this. I began by brewing a pot of coffee…you’ll see why in a minute.
I began by pre-heating the oven to 425 and lining a baking sheet with aluminum foil. Next I cut a few mini Yukon Gold potatoes, tossed them with olive oil and Herbs de Provence…onto one end of the baking sheet. I don’t eat the potatoes, so there’s just enough for Hubby. I added someĀ haricot vert (French green beans) drizzled with a little olive oil and a few grates of sea salt…I do eat these so the amount was generous. Into the oven for 15 minutes.
Now I placeĀ each salmon fillet on a piece of aluminum foil large enough to wrap it in, toss in a few cherry tomatoes, some capres, a splash of white wine and pinch the edges to form a tigh seal. Coffee time ….a few sips and when the timer goes off, add the salmon to the veggies in the oven and reset the timer for 15 minutes. About the time I finish my cup of coffee, our very healthy and tasty dinner is ready – yay! I think Hubby can handle the dishes tonight….I’ve slaved!
