Pumpkin French Toast and Spicy Bacon make the perfect fall breakfast for a weekend morning. Hubby loves anything with pumpkin and this was one of his favs for breakfast. I made him promise to stay in the den until breakfast was ready – my “creating” can get messy and having him scurry around cleaning while I’m in creative mode is not always welcome. About half-way through the process, it smelled so yummy, he couldn’t help himself…he came skulking in. I can’t blame him, it smelled so spicy good.
The key ingredient, that made all the difference was the Raven’s Original Pumpkin Butter – it’s so thick and spicy. I buy it at Karen’s Emporium, close to my house. She carries all the Raven’s Original products – the Pumpkin Butter is a fall and winter specialty – just as good as the spring Raspberry Jalapeno Jam.
I used fresh croissants for the bread and pure maple syrup. For the bacon, it was brushed with a maple syrup/mustard glaze and baked.
In the time it took the bacon to bake in the oven, I had the French Toast ready – it was such an easy way to make breakfast and a rare moment of efficiency for me.
- For the French toast:
- 1 cup non-fat evaporated milk
- 5 Eggs
- ½ tsp salt
- 1 tsp pumpkin pie spice
- 1 tsp vanilla
- 6 Tbs pumpkin butter
- 6 croissants
- For the bacon:
- 12 thick slices bacon
- ⅓ c maple syrup
- ¾ tsp honey mustard
- Preparing your French toast:
- 1. Whisk all of the ingredients well in a deep dish.
- 2. Cut the croissant lengthways and then dip both pieces into the batter, allow excess to drip back into dish.
- 3. Melt butter in a frying pan on medium and add your croissants.
- Cook until golden brown on both sides. (This should take about 2 minutes per side).
- 4. Serve with maple syrup or powdered sugar. Or both!
- Preparing your bacon:
- 1. Preheat the oven to 400 F. Line a baking sheet with aluminum foil and place a rack on top. Lay the bacon slices on the rack.
- 2. Thoroughly mix the mustard and maple syrup. Brush one side of the bacon with the glaze and bake for about 12 minutes. Flip the bacon and brush with the rest of the glaze. Baking for about 10 more minutes depending on crispness desired.
