On the menu Oct 20-24 will be recipes from my recent subscription to Cooking Light Diet – or at least my variations on their recipes. It’s not that I don’t care for their recipes, I just have a tendency to adlib when I’m in a hurry, or forget to purchase an ingredient because I’ve left the grocery list at home.
This week the dinners on the menuĀ are:
Monday: Ancho Chicken Tacos with Cilantro Slaw and Avocado Cream
Tuesday:Baked Shrimp with Tomatoes – I will likely switch to red bell peppers as I’m not a fan of cooked tomatoes
Wednesday: Grilled Shrimp on salad
Thursday: Maple Glazed Salmon – this is something we make at least once a week with a side of Sweet Kale salad
Friday: Chicken Vegetable Stir-Fry
