I is for ….Hubby’s ice cream cake is loved by all in our family. He discovered the recipe in the 70’s, and has been delighting family and friends with it ever since. I had to beg to be allowed to share with you – I hope you enjoy it as much as we do……..
It begins with angel food cake……
cut in thirds and then cubed…….
shake, shake, shake to coat with jello….
now the fun begins, layering……
The layers are thin, he doesn’t completely cover with ice cream. Not to worry, the complete recipe is below. The layers are 1/2 cup fruit. ice cream, 1/2 of coordinating cake cubes, repeat, then on to the next flavor combination……
Frequent finger licking seems to be an integral part of assembly, just an observation….
As you can see, Hubby isn’t concerned with completely covering each layer with ice cream. If he did, he’d run out of room. He finishes with ice cream……
Into the freezer it goes, and we wait……..
During assembly, Hubby places fruit and cake against the sides of the pan to achieve this colorful display….
Enough of the photo session, it’s time to enjoy….
Ingredients
- angel food cake cut into large cubes
- 1 small box of each strawberry, lime, orange jello (not sugar free)
- 1 C each sliced strawberries, blueberries, mandarin oranges
- 1 gallon vanilla ice cream softened
Instructions
- Place ⅓ of the angel food cake cubes in a zip lock bag or plastic container with lid.
- Add one package of the jello powder.
- Shake to coat.
- Lift the cake from container and discard excess jello powder.
- Repeat with the other ⅔ cake and 2 flavors of jello, set aside.
- In an angel food cake pan begin layering strawberries, ice cream, red angel food cake,ice cream, repeat.
- The second layer is the blueberry/lime jello combo, a layer of ice cream.
- Finish with the mandarin oranges and orange jello.
- The final layer is ice cream.
- Freeze - we usually assemble the day before serving.
We have varied the flavors of jello and types of fruit and have enjoyed each variation equally. This is the original recipe.

Hi Valerie- I thought this was so fabulous and couldn’t wait to try it.
I made my own version for Memorial Day that was red, white and blue (strawberry, raspberry & blueberry- or berry blue as Jello refers to it).
Although it wasn’t nearly as pretty as your version, it sure was delish- everyone enjoyed it. Light, refreshing and something really different than the norm.
