Apple-Cucumber Salsa is fabulous with pork, chicken, and fish. I enjoy fresh fruit salsas in the summer with grilled meats and switch to chutney or spicy preserves in the colder months when roasting. They not only make the meat/fish taste better, they add some color and texture to the plate and the visual appeal is a huge part of the overall presentation. Hubby might be content with canned corn, stove top stuffing, and baked chicken – I am not. Every time the man is trying to accumulate a few more gas points at the grocery store he loads up on Stove Top stuffing and Kraft Mac and Cheese – I must be depriving him of his favorite boxed sides.
I’m rambling, forgive me….back to the salsa.
Apple Cucumber Salsa is perfect year round. It’s a little tart and crunchy – quite refreshing. I plan to make it again once I breakdown and acknowledge that fall is around the corner. We love roasted pork tenderloin with the Cinnamon Chile Rub and roasted root veggies – I think this salsa will be a great accompaniment.
The Cinnamon Chile spice is actually a rub from Victoria Taylor Seasonings – OMGoodness, it’s FAB! I buy it at TJ MAxx, but if you aren’t able to find it there, you can purchase it here
For this meal we used the salsa on fish tacos with a little Jalapeno Cream on top. We’d sprinkled the fish with the Cinnamon Chile Rub prior to cooking for a little added flavor. The Cinnamon Chile Rub is one of my favorite “go-to” spices when I’m making a fast dinner for two. I rub it on pork tenderloin before roasting – it’s delish.
- ¼-1/2 teaspoon cinnamon chile spice
- 1 Granny Smith Apple, cored and chopped
- ½ English cucumber chopped
- 1 tablespoon fresh mint chopped
- ½ tablespoon honey or agave
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ cup rough chopped almonds
- Combine all the ingredients, except the almonds and store in refrigerator for up to several hours.
- Add the almonds right before serving - tada!
