Thirty minute meals, I can top that – how about 10 minutes to yummy? That sure fits better into my day, more time for fun.
I’ve been trying recipes from an older cookbook, I have a huge collection that I don’t really use. The Poached Salmon Cutlets with Mango is a favorite from 10-Minute Cuisine.
2 Tbsp olive oil
Piece of fresh gingerroot (1″ across)
2 shallots
1 garlic clove
1/2 tsp chili powder
1/2 C water
1 Tbsp white wine vinegar
1 Tbsp anchovy essence
1 tsp sugar
4 salmon cutlets skin removed (divide in 2 lengthwise)
small bunch cilantro
1 ripe mango – or bag of frozen mango slices
1. heat olive oil in wok
2. whizz ginger, shallots, garlic, and chili powder in food processor to coarse paste
3. add paste to wok, cook 1 minute
4. add water, vinegar, anchovy, sugar – simmer
5. add salmon and snip in cilantro
6. cook 3 minutes, turning once
7. keep warm, allow to settle for 2 minutes
8. spoon salmon onto serving plate, add mango, pour cooking juice over and serve with either rice or noodles.
10 minutes of cooking – so easy and delish!
